Introduction

Just the five of us to celebrate Greg's birthday with a great set of dishes prepared by Chef Bombana.

Flight 1 - Aperitif (1 note)

Silvery gold. Muted, very muted nose: quite metallic, not much complexity and very closed. Palate is very roasted but highly acidic. Not particularly enjoyable, which is a big contrast to when I drank it a year ago and found it very more-ish. Maybe just too young and in a sullen patch.....but definitely not worth restaurant asking prices.

Quite rich lemon gold colour but showing no great signs of its age, certainly not its 12 years'. Nose is lovely - lifted, lemony fragrance, almost like a really luxury lemon soap. There is even a resonance on the nose, which is rare to encounter even amongst the finest wines. Palate has some definite but lightly oily weight on the entry then a deep oily lemon that coats the palate but which is balanced by a saliva-enducing acidic freshness. Thius is very lemony in multiple dimensions.Very good resonance and a very satisfyingly rolling reverberance on the finish. Impressively fresh and has at least several years ahead of it. My first experience of the producer and I loved it.

From magnum. Dusky ruby clouded jewel colour. Nose is shitty, slutty, slurry but with that great cleanliness you associate with Swiss cow sheds.....then the tell-tale signature falling down Alice's rabbit hole into beguiling and mesmerising complexity. Palate is clean, fresh but with just slightly overly high acidity with is the only discordant note, maybe because of the magnum format although I haven't detected it even in previous magnums. A really beautiful wine that flirts with greatness.

Flight 4 - Cheeses and a Chocolate Dessert (1 note)

A 5-hour decant, which it needs to show its best. Dense and opaque purple-red colour but freshening at the edges. Nose is deep mahogany furniture, milk chocolate, white nougat, mocha coffee, fresh blackcurrents and fresh blackberries, pencil lead.....really complex and beguiling. Palate is really fresh, jeweled cut in the mouth with similar sensations to the nose but near-dominated in a good way by the enormous mounting and irresistable resonance that is totally head-filling with the following reverberance on the finish. Lots of deep and heavy Bach cathedral organ notes here. Fantastic......I treasure my few remaining bottles.
