Introduction

The Usual mix of great friend, great food and great wine which however did not perform as expected this time.

Flight 1 - The Start (2 notes)

Truffle Salami, 30 month aged Parmesan, lingua di siucera, Aged Balsamic
Truffle and smoke gazpacho
Hot 'N' Cold - Burrata and Nduja on rye

White - Sparkling

At a great place now and probably at peak or just past it.
Well evolved. Soft, round, toasty, nice rich feel to it , decent acidity but this is more of round and giving wine than a focused and precise champagne at this stage. Not as great as the ones we tried back in 2017 ( Papies 93-94) but still very solid. Drink sooner than later.

True to is style and consistent with about 2 years ago, this is a rich, round, toasty champagne, very much a bollie style but the extra time on Lees add even more depth albeit takes some of the focus. This is now drinking very nicely offering a solid experience when one is looking for this round, rich , toasty and givign style. Solid 92-93

The Egg before the Chicken - Quail Egg on blini with truffle caviar
The Burger - Wagyu and Aged, Old Dexter blend. Homemade ketchup spin
Pasta La Vista - Agnioloti del Plin from Tartufo Ponzio in Alba, Truffle butter, mashrooms and lemon zest

Well past its peak here and decanting it was mistake as the wine is very fragile (at least our bottle) and a far cry of the 93 we gave it 6 years ago. The nose on open was very well evolved classic bordeax, leather and earthy, truffle feel. But the palate is long past its good days. 88 and drink up

A great surprise given the critics and the vintage and really delivers for the seekers like us of classic, soft and well matured classy Bordeaux.
Soft and earthy but with life in it, leather and spice, herby edge and really very classy and elegant from nose to palate. A great find and amazing value as many off vintage figeacs are ( Like many Tertre Roteboeufs too btw) Solid 93

The Duke of Alba - Beef Wellington with lots of truffle in the duxelles. Cavollo nero with enoki mashrooms.

A year since we had this last (Papies 91) and easily walking down the good path. Still very young and decanting felt essential and post a good 2 hours of it the wine was in its youthful stride.
New world ripeness but with an old school restraint as many of the these less ripe vintage 90s Napa wines are. Bright fruit, just showing some glimpses of development on the secondary side but also super solid structure. Very solid 92 and with a lot of time in the tank

A wine we rate consistently 94-96 over the last 5 years over 9 tastings but on this time ( Last time was 1 yr ago from the same batch) it was not up to speed. Too much spice, pepper and very little fruit and felt really unbalanced and lacked charm and elegance. We will call it a miss and not rate

This felt unbalance, a bit of a fruit juice at time and totally lacked depth of flavor and any sort of elegance we are used to at this level albeit this been a Spatlese. A lot of petrolly touches on the nose but really nothing past that. Dissapointing 87
