Introduction

Considering all the precaution the corona crisis demands we were able to forget for several hours the present problems with the combination of well chosen wines, including the rarity: 1991 Avignonesi Vin Santo, the cooking Fien did and of the sun in their lovely garden.

Classic, even a bit severe, but in the positive way, firm bouquet, good body, dry, but not too, elegant mousse and good bitters and tannins; not a wishy-washy champagne.

At first the impression of old wood is a bit too hefty, but after 20 minutes the bouquet also shows a gentle sweet and buttery style and more acidity from the backbone. Than you have the enjoyable profile of a classic chassagne with a firm taste, not a lot of finesse, but tasty and pure and maybe even a bit too young now. I keep thinking that less (old) wood will add to the complexity of the wine.

Decanted 5 hours before (and than back in the bottle); a dark concentrated colour, and in fact, also a dark and concentrated bouquet, black fruit, some mint and also cream. From the bouquet to the finish firm bitters support the wine. This is absolutely not a 2001-profile, my guess was '98. With more air in the glass there was more fruit, more citrus and more creaminess. The wine became even juicy, but stayed also a bit chunky. Nineteen years old, alive and kicking.

Extreme! A very, very dark brown colour with a yellow rim; bouquet, violets, syrup, from deep down comes some citrus, currents, ripe bitters and all together super, super concentrated. The aftertaste is endless. There are maybe some similarities with PX sherry, but this Vin Santo has a character of its own. Unique, I think. Superb with Dutch cheeses.
