Flight 1 - Starter (1 note)
White - Sparkling
2008 Saint-Chamant Champagne Brut Cuvee de Chardonnay
Yeasty nose, almond, very elegant nose, flintiness, good drive, steely and fresh, yellow fruit and almost a suggestion of red fruit which is weird for Chardonnay; this hasn't budged much so I'm under the impression to wait longer.

Flight 2 - Barolo (3 notes)

1958 Giacomo Borgogno & Figli Barolo Riserva
Sweet tea copper, fully resolved color; incense, dried roses, maduro cigar, dried fruit, leather; balsamic on the palate, still very alive, very interesting, I wanted to smell this all day but I feel the palate was a little bit better which is something you rarely say, incredible amount of umami that keeps building; very good and surprisingly delicious; finally a Borgogno that exceeds expectation.

1971 Pio Cesare Barolo
Pale amber core with greenish yellow rim; lots more obvious soy and celery seed on the nose in comparison to the '58 Borgogno, tea, a more opulent wine, fat, soft acids, interesting but this has lost its fruit and tension.

1990 Giacomo Borgogno & Figli Barolo Riserva
Pure crimson with orange rim; still driving flavors, sour cherry, medicinal, cedar, still tannic, good wine but very linear and youthfully boring in comparison to the 1958, I guess we need to give this 32 more years?

Crimson maroon, wow- doesn't look like 61 year old wine; lovely nose, sweet plum, American oak, sexy silky and delicious, all of us have trouble agreeing this wine that is rebottled and recorked could be this old which leaves me confused on how to take it other than a tasty bottle of wine.

1986 Marqués de Cáceres Rioja Gran Reserva
Color suggests age but still has good density of color; rustic nose, leather, autumnal, woodsy, slight American oak dill, great musk to it, aged beautifully, so complex yet it still retains a deliciousness to it, juicy acids and enough body to keep up with it; drink soon to make sure you catch its beauty.

Deeper amber color; intense nose, youthful, lemon and lime zest, nutty, marzipan, so powerful and delicious.

1991 Chateau Montelena Cabernet Sauvignon The Montelena Estate
Great color, dark crimson; deep nose, tons of fruit, ripeness, eucalyptus, sage, bay leaf, more sap and glycerin than Bordeaux, creamier and seamless on the palate, black currant, lovely tobacco, clearly well stored, fantastic and still so young and vertical.

Still dark core, cloudy garnet rim; black currant, pencil shavings, earth, still young and purple; great texture, wet earth, tobacco, dark chocolate, fresh black fruit; in a great spot and needs more time; delicious.

1996 Beringer Vineyards Cabernet Franc Third Century
Ashy nose, mineral, yeast, doughy, red fruit, herb, fleshy and fat on the palate, dusty, a touch awkward, chocolate on the finish, malty; a nice wine but tough stacking up in the context of the first 2 in the flight.

Pale crimson core with orange brown rim; aged nose, celery seed, rustic, wants to sweeten up, trying to coax it out but it feels a bit hard, acid and body are there, not sure if it made it.

2011 Henri Boillot Bienvenues-Bâtard-Montrachet
Steely yellow; wow that is a fresh nose, still reduced but not offensively so, because of that people wanted to dive right in but this is still so young, the jagged '11 acids have rounded out a bit but this is so vertical and atructured, lemon curd, lovely vanilla and electric acid; declious.

2006 Dom Pérignon Champagne
A late treat this is all joy, beautifully buoyant, white fruited and so clean, slight dried almond, some honey, asian pear, could mistake the balance and elegance as a shortcoming when compared to the other bubbles today but all you do is bask in its regality and attractiveness.

The '58 was the star today with a strong '86 and phenomenal '91 still so young giving you the hope that all wine aged this well. What a treat!
