Very light pink colour due to the pinor noir skins
Vibrant nose full of fruit: ripe, baked apples, pink grapefruit, blood orange; vanilla & brioche tones.
High in acidity, strong body but still feels light because of low alcohol and very fine, silky mousse, long length
A fantastic and pure champagne, makes all the big houses run for their money and of the best young champagnes I have tasted. Only reason for not scoring higher is its youth, but these wines need to be drank young

The Millenium bottle. Opened for 8 hours, decanted. Light Ruby-red. Aromatic nose notes of plums, cherries, oak, with strong stench of wet wood. May have opened up for too many hours, fruits fragrance fading. Velvety coat on palate of fruits, blackcurrants, bits of oak and chocolate, fair structures, and balanced acid back of the palate. Medium finish with still very firm tannin, would cellaring for another 5 years improve it, any opinion out there, still have 3 bottles left

    6/13/11, 1:07 PM - My suggestion would be to drink up, I doubt whether the wine has the tannins or acids to support longer term cellaring. Enjoy!
