A lovely balanced champagne with bright fruit flavors, hints of salt, and a touch of yeast on the nose. Has a mouth coating presence with easy effervescence on the finish & lingering minerality.

Secondary fermentation had occurred in the bottle. Was quite fizzy and not pleasant. I thought it might burn off after an hour but it just got flat and flavorless. Second night, after pumping, was not fizzy but lacked any fruit or earth flavors. Cork was a bit pushed but did not appear to have leaked.

Rich black and blue fruit on the front a little tight even after an hour decant. Opened up nice to mocha and a touch of barnyard on the nose with some sweet cedar hints and some cinnamon. About two hours in it had a lush mouthfeel with lingering rose petals and white chocolate on the finish. Deep plum in color and very heavy sediment, more funk and barnyard on nose as it opened with terrific leather and earth which rolled into the midpalate as it opened. A great bottle!
