Tonight w/ pan seared halibut. Nita comments, "oh you're opening the good stuff tonight". Yep, as I groan how this ramped up significantly in cost since I last paid $76 for it. Maybe the only negative to being a Burgundy lover is that eventually you have to part ways with heavily chased producers like Dauvissat. I believe I saw a Forest offer this past week for $200. And its worth it, if you can afford the tariff. I can't, but what a wonderful btl this was tonight! Dauvissat's consummate balance is beyond reproach. The first sips would easily give this away in a blind tasting. There's such harmony between the fruit and its acidity. Then the mineral, salinity and other harmonics kick in. Delighted to share this tonight w/ Nita who sometimes doesn't see my best bottles. Always that conflict between sharing w/ my wife of 45rs & my buddies who might ooh & ah a bit more :) Fantastic tonight b4, during & after dinner at our dinner table as our lovely MN spring colors kick in outside our kitchen windows. A beautiful Chablis, very classic with amped up intensity and so much oyster shell. This has developed nicely since I last popped one almost 2 years ago. Crystalline lemon fruit, small touch of honey, framed by a shell fish nose, so much oyster and all kinds of chalky seafood goodness. Entering drinking window and will hold for many years to come no doubt. (1588 views)

Riper on the nose and palate than I would have expected. Very unexpected buttery popcorn on the palate which threw me off for a loop initially. Ripe stonefruit and pears, quince, butter and oak spices. The ripeness really stood out to me here as I was expecting more Chablis like characteristics (minerality). (1633 views)

Virker å ha kommet litt langt ved åpning, merker litt nedfallsfrukt på nesen.

Strammer seg dog raskt opp på karaffel og blir egentlig veldig klassisk og nedstrippet. Ikke superåpen.

Strålende i munn. Aromatisk er den bare proppfull av Chablis-typisitet. Man merker at frukten har noe sødme i kjernen, men det er så fullt av salt og syrlighet at det blir en nydelig balansert, og faktisk en veldig intens vin, ikke bare strukturelt, men også aromatisk. Sitter lenge.

Nydelig Chablis, men denne flasken føltes nesten som den var i en litt lukket fase. Venter noen år med neste flaske. (2103 views)

I usually prefer the Chablis from Raveneau, as I seem to have terrible luck with Dauvissat, so I was very happy when this bottle showed so well. Initially a little closed and needed some 30 minutes to wake up properly. A little bit of matchstick, loads of oyster, sea breeze and stone followed by lemon peel, lime, white grape and crisp green apple. Linear, precise and acid driven, lean and really well balanced. Love on first sip. Very pronounced flavor intensity of lemon citrus oil, crushed rocks, matchstick, and a slight phenolic grip. High mouthwatering fresh acidiity and really long persistent finish. Overall a ridiculously good bottle of 1er Cru Chablis. Drank in Reims. (2229 views)

Medium yellow color. Citrus and apple aromas with a bit of a floral element lurking. Palate is rounding out but still has a strong streak of lemon citrus and mineral, followed by apple and honeysuckle. The finish is medium-long with mineral impressions that recede to leave more apple notes. First btl about 30 mons ago. This continues to rock and further its march to glory! Such a classy & pristine glass of world class Chardonnay. Sadly, the market is rapidly knocking new releases dramatically, out of my humble reach, with each passing year since 2010. I’ll try to space out my remaining btls, judiciously! 2015, 2016, 2017 à la carte... j'opte pour le 2017 vu la qualité du millésime, même si c'est le plus jeune, et c'est le bon choix! Nez certes encore un peu fermé mais d'un précision inouïe, très typée Chablis. En bouche, c'est précis, ciselé; s'ouvre avec ampleur, l'acidité est mûre, sapide. Finale d'une longueur infinie, avec ce qu'il faut de minéralité. Etonnament prêt à boire, mais s'épanouira sur 20 ans certainement. Tout grand vin, l'un des plus beaux blancs que j'aie dégusté. After the excellent '11 I have tasted this '17 (to inform Harley1199 ☺and) to experience the difference between young and ripe.
Combining the tasting notes of the last 5 tasters before me, I agree with them; only hoping that Mtolerice will discover soon the refinement and complexity in this wine. This wine, indeed young, shows less minerality and stony style than ripe, but the superb elegance and balance assures a fantastic future. The refined persistence and the super elegant almond finish is already at Coche-Dury level. (3997 views)

In October 2019 I doubted that the 2017 was a great vintage, to put with top vintages like 2010 and 2014. Drinking this bottle over three days, however I am more impressed, absolutely thinking it top class ... Light gold. Lovely - and classic Chablis - bouquet of fine lemon, chalk, yellow apple with a little green apple, lime juice, lanolin and trace of pineapple. I found less of an exotic fruit character to the nose - and mouth - than I noted in 2019. On palate, vibrant, refreshing acidity. Elegance with intensity and power. Plenty of Chablis character wet oyster shell and a dry, saline finish. Also, lemon, river boulder, white peach, pear and apple. Good volume, fruit weight and structure. Relatively long. Three out of Five Ain't Bad (The Kenwood, Mpls, MN): Ultra pale color. Drank a glass over two hours. This is pretty taut and laser sharp right now with racy citrus and tart white fruits and a good core of ocean minerality and sea breeze. It's all there. 92-94pts. (3671 views)

Double blind Cab based wine tasting (Eddie V's - Tysons Corner, VA): Very rich nose initially. With air, medium expressive nose displaying ripe yet pure and succulent white and yellow fruit, granny smith, lemon curd, lanoline, oyster shell and wet stone. Excellent concentration, packed slightly coiled citrus fruit, good focus, precision and energy and a medium to long succulent white fruit driven finish with lanoline at the end. Although very youthful, drinking nicely. I imagine this will go beautifully with raw oysters. (4587 views)

At its best, in some vintages, like 2014 and 2010, and even 2016, this 1er can achieve Grand Cru quality. On the evidence of this bottle, I doubt that the 2017 version has this quality ... Still it's a good, to very good, 1er, and may integrate and improve ... Leading with notes of green apple and citrus, then peach, pineapple and other exotic fruits and a little lemon toffee on the nose. Some chalky, oyster shell minerality. Overall, the bouquet is quite fruit forward, not very Chablis-specific. In the mouth, lemon and grapefuit on the attack. Good volume, concentration and power. There is vibrant, bracing acidity on the mid palate, which if the best feature of the wine and suggests a better future. A hint of salinity on the moderately long finish. At this time, however it is a little too chunky and too much tinned peaches and tropical fruit for a top Chablis, for me. Not, however, a bad Chardonnay. A bit of a mixed bag that may improve after 3-5 years. Scored based on current performance. (3097 views)

Zesty green apples, white blossoms and wet stones. It’s intensity is satisfying but unfortunately you can’t help detecting already slightly oxidative Chardonnay notes of toffee and hay. The palate is of good fruit concentration with lots of balanced acidity. Hope the early maturing nose doesn’t ruin it for the future.

Did not show as expected, one of our group called Oregon pinot gris, very fruit forward, florals and melon, a bit tropical but very light, not as much minerality as I would expect with this wine.
