 Tasted by ShawnT on 7/28/2023 & rated 91 points: Straw coloured, strong (almost invasive) toasty, apple pie. Creamy mouthfeel and has a very dinstinct saline taste.

When paired with cured trout and Parisian white ham, the taste becomes sappy, bitter lemons. Interesting champagne (318 views)

And it defied east categorization — sweet and fruity and big and easy drinking like the dosage would suggest, but with an interesting brooding herbal character the grower / meunier would suggest. Good stuff. Less impressive on day 2 so I’d say don’t age it too long. (661 views)

Nice intensity, find bubbles, luscious citrus and berry fruit, chalk, faint leesy notes. Not sure what the discordagement date was for this bottling but it was originally purchased in 2015 and drinking beautifully. (819 views)

It feels so 'adult' - a full, round mouthful - it put me in mind of Christmas cake (rich, spiced, dried fruits), which is not sure I want from champagne. I don't actually dislike it, I just can't imagine for what kind of event I would ever open it. Try it! (978 views)

Really liked this. Dry, herbaceous with a distinct fennel note... I read this as a “blue” flavor, yet with a spicy bite (fennel seed). Holds my interest all the way through the finish. The effervescence is pretty aggressive - I liked this best after it’d been in glass for 20ish minutes. (1025 views)

Some faint red fruit notes on the nose and palate, alongside smoke and minerality, this wine has a medium length finish and is quite tasty. Drink now through 2022+. (1033 views)

On the web, I found that this blend is 15% PN, 50% PM, 35% Chardonnay, using 30% reserve wines, 10 g/L dosage.
This wine is vinified in steel vats, and it does go through malo, spending 60 months on the lees.
Aromas and flavors of faint strawberry, raspberry, and lemon, there is a distinct slate and mineral nuance, and freshly baked bread crust.

 Tasted by MLipton on 5/24/2015: Opened tonight with pan roasted Chilean Sea Bass. Zippy acidity, yeasty aromas but mercifully light on the toasty character. Somewhat round in the mouth (but we've been drinking non-dosé Blanc de Blancs recently) with lovely mineral notes. Very appealing. (1555 views)

France - When it comes to wine, France stands alone. No other country can beat it in terms of consistent quality and diversity. And while many of its Region, Bordeaux, Burgundy and Champagne most obviously, produce wine as rare, as sought-after and nearly as expensive as gold, there are just as many obscurities and values to be had from little known appellations throughout the country. Sub-Region:

Champagne - The French region of Champagne (including the cities of Rheims, Épernay, and Aÿ) was the first region in the world to make sparkling wine in any quantity. Today, the name of the region is synonymous with the finest of all sparkling wines, and wine-making traditions of Champagne have become role models for sparkling wine producers, worldwide. Surprisingly, the region of Champagne is now responsible for only one bottle in 12 of all sparkling wine produced. Styles of champagne range in sweetness ranging from an extra brut or brut 0, to the basic brut to demi sec to doux; some houses produce single vintage champagnes and others produce non-vintage (or incorporate wines/grapes of multiple vintages), often to preserve a specific taste; combinations of grape varietals; and colors, including a rosé. There are several sub-appellations, including the Valley of the Marnes river running from Épernay west, Massif de Saint-Thierry north and west of Rheims, Valley of the Ardre, the Mountains of Rheims (between Rheims and Épernay), Côte des Blancs, Côte de Sézanne, and Côte des Bar in the South. Champagne wine only uses three grape varietals (cépages): Chardonnay, Pinot Noir, and Pinot Meunier.
