 Tasted by rmcnees on 12/28/2020 & rated 92 points: At twenty-one years, this 1999 Ristow Cabernet Sauvignon, Quinta de Pedras Vineyard was outstanding and showed no signed of diminution from aging whatsoever. There is much life left in this release, I could imagine it lasting another ten years. The label, foil and cork were perfect, the neck caked with a layer of sediment. Dark inky blackish purple colored, full bodied, intense bouquet of ripe black fruits exploded from the bottle upon opening, complex blackberry, plum, and black currant fruits with aromas of exotic spice, herbs, anise, and dust, fruit forward on the palate with ripe black fruits, cassis, dark mocha, spice, leather, earth, and a seamless integration of acid, alcohol and tannin with a long finish that went on and on and on.

 Tasted by SeattlePaul on 5/5/2019: Coravin day 0. Some bretty funk on the nose, but quite subtle. Big, dark fruit and expansive, complex presentation on the palate. The funk comes back in the finish though, which is pretty disconcerting. Overall this is a pleasant, well constructed wine. (1099 views)

 Tasted by TashNYC on 1/15/2017 & rated 90 points: Food and Wine in Maplewood (Maplewood, NJ): Well, this magnum finally turned up, after being "lost" in our cellar for almost a decade! -- and just in time for a wine tasting meal with prime rib my friend was organizing. So I figured it was meant to be.

For a 1999 wine, I was surprised how tannic and youthful the wine drank. There were noticeable tannins in the finish, plus red fruit flavors cherry, cassis and currants, with a little plum and some cedar as well. The mid-palette was a touch hollow (vs. when I tasted the wine in 2006), and it did seem to have a strong taste on the finish. (My friend thought it had a formaldehyde flavor on the finish, although I didn't find any). It was an ok pairing with the prime rib, but not as good as the Reverie -- to me because it was too tannic for the prime rib. (I had originally tasted this wine with the Coravin, but thought it didn't that well, so I went on to the Reverie). It probably drank a little better a few years earlier, but still good today.

We received this bottle as a gift in 2006. The retail was between $60 - $100 / 750 ml bottle. We drank 1 750 ml bottle using the Coravin, saving the other half for later.

All the grapes are from the Ristow Estate’s Quinta de Pedras Vineyard, located on the eastern side of the Silverado Trail, just south of the Stags Leap District in the Napa Valley. This rocky hillside vineyard produces limited quantities of intensely flavored and complex Cabernet Sauvignon. Turns out the Ristow family (who are both growers and winemakers) stopped making this wine after the 2005 vintage (a winery named Pedras continued), and they sold the vineyard in 2013. This is all too bad, as I liked the Ristow wines.

Drink now. And don't lose bottles in the cellar for a decade!

Full, forward & attractive nose of mature & well developed, complex dark fruit aromas of cherries, cassis/currants & plums with earthiness, dusty & cedar overtones, dried herbs, spices, anise & mint notes, minerals, dark cocoa & a hint of vanilla in the background. Full bodied with a very good concentration of smooth textured & balanced, mature & developed, complex dark fruit flavors of cherries, blackberries & plums, herbs, mint, spices, cocoa, minerals, a slight touch of vanilla. Long lingering finish. Drinks quite well at present and at its peak of development, but should last for another year or two. Tight, clean cork; kept in cellar (52 degrees) undisturbed since purchase. Modest nose of blackberrry, cherry, and leather. Medium body and on the dry side in the mouth. Tannins are non-existent. The wine doesn't seem to show it's age in the glass as there is very little copper around the rim but it's definitely drink up time if you have some. (3174 views)

 Tasted by 7111 on 10/30/2010: I have opened 3 in the last couple of months. They are starting to show signs of their age. Rusty rim color. Sour finish. Tons of sediment. This wine has been kept in my cellar in the low 60's. Maybe colder cellaring would have helped. (3210 views)
 Tasted by Ajnate on 10/4/2010: Inky dark, tobacco, leather, black licorice on nowe with a touch of eucalyptus as well. Brighter on palate with clear tannins. Lighter fruit than i expected with a moderate finish. Still has some time to develop i think in terms of structure, but concerned that the fruit will fade as the rest of the wine comes into better balance. No confusing this with anything other than a California Cab....much better balance and sweeter fruit after 30 minutes in the glass. Drink over next 2-3 years. (1058 views)

Really nice acidity. Not as earthy as most Bordeaux I have had but not huge cabernet fruit either. Reminds me a little of the Amici I had recently. (2353 views)

Don't get me wrong, the wine was nice, but I didn't get the sense that this wine had many years ahead of it. It took 20-30 mins to open up, but drank very well with a sausage and cheese plate. Full nectar with soft tannins yet possessing a cranberry acidity for balance. Good flavor extraction spotlighting black cherry with red currant, cinnimon, earthy soil and minerals as collateral. Cabernet Sauvignon

Cabernet Sauvignon is probably the most famous red wine grape variety on Earth. It is rivaled in this regard only by its Bordeaux stablemate Merlot, and its opposite number in Burgundy, Pinot Noir. From its origins in Bordeaux, Cabernet has successfully spread to almost every winegrowing country in the world. It is now the key grape variety in many first-rate New World wine regions, most notably Napa Valley, Coonawarra and Maipo Valley. Wherever they come from, Cabernet Sauvignon wines always seem to demonstrate a handful of common character traits: deep color, good tannin structure, moderate acidity and aromas of blackcurrant, tomato leaf, dark spices and cedarwood.

Used as frequently in blends as in varietal wines, Cabernet Sauvignon has a large number of common blending partners. Apart from the obvious Merlot and Cabernet Franc, the most prevalent of these are Malbec, Petit Verdot and Carmenere (the ingredients of a classic Bordeaux Blend), Shiraz (in Australia's favorite blend) and in Spain and South America, a Cabernet – Tempranillo blend is now commonplace. Even the bold Tannat-based wines of Madiran are now generally softened with Cabernet Sauvignon

American wine has been produced since the 1500s, with the first widespread production beginning in New Mexico in 1628. Today, wine production is undertaken in all fifty states, with California producing 84% of all U.S. wine. The continent of North America is home to several native species of grape, including Vitis labrusca, Vitis riparia, Vitis rotundifolia, and Vitis vulpina, but the wine-making industry is based almost entirely on the cultivation of the European Vitis vinifera, which was introduced by European settlers. With more than 1,100,000 acres (4,500 km2) under vine, the United States is the fourth-largest wine producing country in the world, after Italy, Spain, and France.
