 Tasted by Philolesen on 8/7/2023 & rated 92 points: Bottle in pristine condition. Recorked at the domaine. Wonderful smell of honey, nuts, pineapple, peach and yoghurt.
The wine showed high level of acidity which tells me it could live on for 10 years more (given the bottle is in good condition), but I do not see any reason to hold on to it. Very good and vibrant wine.

 Tasted by J'agnes on 9/26/2021 & rated 91 points: Cork was good but some seepage to the halfway point. Nose was somewhat reticent with a hint of oak. Very rich honeyed palate with layers of dried stone fruit. Good streak of acidity from the Sauvignon and very long refreshing finish. Not sure about how much longer to keep unless one could guarantee impeccable provenance. (1575 views)
 Tasted by honest bob on 10/30/2020 & rated 94 points: From 75cl, same impeccable provenance as my last bottle (TN 20.06.2016). Exquisite cork, opened but not decanted 1 hour, continued to improve in the glass. Refined scent with jasmine, a hint of incense and, of course, luxurious oak. The entry is highly concentrated yet bright, bouncy and acidic; the mid-palate a miracle of balance between precise structure (meticulous use of oak), acidic nerve and just enough SB varietal typicity to remind you we're not playing in a –very– elevated league of white Burgundy. Almonds, almonds, almonds. Long, resonant finish. This is perhaps the "lightest" wine I can remember tasting which displayed this degree of concentration and aromatic complexity. Peak maturity now, but with plenty of time in hand. 94P (2229 views)
 Tasted by dcwino on 1/21/2020 & rated 94 points: Domaine de Chevalier vertical with Olivier Bernard (Le Cafe Descartes at the French Embassy): Expressive nose displaying rich yellow fruit, kiwi, lemon curd, crème brulee, a hint of green, honey and limestone. Excellent concentration, nicely layered concentrated sweet yellow fruit, rich and sweet yet harmonious and nicely detailed, medium acidity, good mineral presence and a long rich yellow fruit driven finish with lanoline and light caramel at the end. Someone thought this was too young, which makes no sense to me but…. This is drinking perfectly, still showing generous rich fruit but also complexity via lanoline and honey. (3637 views)

The palate is plush but racy, with exquisite minerals and saline, balancing off of this honey, almond elements. Apricot and orange marmalade fruit, with all these complex mineral, dusty elements. So pretty, deep and lively, this has many, many years ahead. (2628 views)

 Tasted by Sandbar on 12/9/2018 & rated 92 points: This was the third bottle opened him a case purchased at auction. Three years ago I’ve visited Chevalier with Dewey Markham, Author of the definitive guide to the 1855 classification. At that visit, we tasted several vintages is going back to 1987. This 2000, is halfway there. Some of the acidity is gone, having been replaced by warm notes of nuts, stone fruit, especially dried apricot. The longer stayed in the glass, the more these notes became more pronounced.

I have been burned by many Burgundies that were prematurely oxidized, and of course I worried about this wine. No problem. It is a wonderful expression of the blend, and probably could go another 10 years. (2075 views)

 Tasted by L-C. on 8/10/2018 & rated 90 points: Deep straw golden colour. This needed twenty minutes to open up, but developed eventually an intense nose of roasted almonds, ripe stone fruit and some burgeon de cassis. In the mouth medium bodied, there is some nice tension and grippy texture. Excellent length. To me not as complex as a top notch burgundy, but certainly very interesting and rather elegant. Firm, full body with a very taut acid structure that lends youthful freshness to apple, soft waxy notes and delicate roasted hazelnut flavours. The finish is long, crisp and fresh. A brilliant bottle. Drink now and perhaps to 2022. (2421 views)

 Tasted by Chimer on 7/10/2017 & rated 94 points: Deepening yellow but still bright, this is the 2nd time of tasting this within the past month, from a case purchased on release and stored in ideal conditions. Waxy notes and a full bouquet that is moving towards nutty but still fresh with plenty of bright acidity. These bottles were in terrific condition and drank beautifully alongside crab gratin. Honey, lanolin and Sauvignon Blanc (duh) scent; very lovely sour-floral-nectar entry with powerful crescendo to a marvellous, full-bodied, sour mid-palate. Long finish. This still tastes vivid, perhaps at the start of full maturity. No hurry. 91P (2520 views)

 Tasted by rossi.wine on 6/18/2015 & rated 94 points: From magnum. Tasted next to the 2010 Smith Haut Lafitte Blanc. Not much more evolved than the 2010. Expressive and complex on the nose, ripe stone fruit notes mixed with citrus fruit, lemon peel, honey and slightly smoky notes. On the palate rich and a little waxy, creamy. But there is lots of acidity and vibrancy lifting this richness and creating a wonderfully balanced mouthfeel. Impressive length.  Tasted by MAOC on 5/10/2015: With lunch at Kitchen W8. Decanted for 90 minutes. Light greeney gold colour. Nose a little tight but showed rich apple and touches of minerality. The palate was almost Mersault like with slightly honeyed creamy Apple and touches of hazelnut, but also with unmistakable Sauvignon Blanc notes and freshness. Zingy high acidity. Tight and grippy. Lemon-lime and some minerality. Still fresh despite the age.
Judging by the pedigree, was really a waste to have opened this at the end of the night. Not enough time for it to show itself, and most us already lacked the focus by that time of the night. (3349 views)
