Flight 1 - 1st round - With Oyster & Chicken Rice (3 Notes)

I would say the Macon paired well with the oyster though not perfect and the Rose going nicely with the chicken rice too.

  • NV Moët & Chandon Champagne Brut Imperial Rosé 86 Points

    Popped and poured. Similar to the NV, this has touch of yeastiness, green apple, red cherry fruits, quite intense. The bubble on the palate wasn't that smooth at first, a little bit sharp. However, after about 1.5hrs, everything become much nicer. Smooth, juicy, sweet red cherry fruits, lemon and green apple with a touch of toast, medium length finish. Not bad though a touch simple.

  • 2009 Les Héritiers du Comte Lafon Mâcon-Milly-Lamartine 87 Points

    Popped and poured. This was drinking perfectly after opened for 2hrs in the bottle. An absolute value for this quality. High tone citrus lemon, red apple and quite huge mineral at the background along with touch of white and yellow flower that continue to the rounded palate with good intensity and purity. The Macon region is benefited from the 2009 vintage which gaining in weight, flesh and lovely fruits concentration and sweetness to give the bright acid and mineral a perfect balance and desirably complexity that punching above the value. Medium length juicy finish. A lovely drink.

  • 2007 Domaine Fourrier Gevrey-Chambertin 1er Cru Combe aux Moines Vieille Vigne 90 Points

    Popped and poured. Very tight on both nose and palate with some reduction note that kinda masked the intense underlying aromas of red cherries, floral, earth, wildness and mineral. Sour cherry on the palate, very shy but you can sense there are a lot more going on underneath, just tightly knit now and need time to show.

    Day 2: The reduction has finally settled down and showing lovely red floral and cherries on the nose with chalk, mineral and wild gaminess. The palate is equally lovely with bright red fruits and lots of mid palate sap that formed a very good full filling mouth filling with medium level of depth and complexity. The purity, focus and precision here is absolutely lovely. The medium level of very fine tannin kick in at the back warrant this for the mid term development in the bottle. Juicy, detail long finish with mineral, autumn leave aftertaste. Well made. 90-91+

Flight 2 - 2nd round - keep it going! (3 Notes)

  • 2010 A.J. Adam Hofberg Riesling Trocken 90 Points

    A.P 2 594 581 02 11. Popped and poured. Very tight on the nose with some sulphur note dominated. Grapefruits, citrus, pear, mineral and touch of pineapple note. Very elegance and intense on the palate, with soft, lightly creamy texture wrapping up the sweet yellow fruits attack on the entry. Energetic and fresh, very fine and detail on the long lingering finish.

    The wine is absolutely singing. Airy on the nose, highly perfume but soft and gentle. On the palate is it lush, creamy, soft elegant mouth feel with great bright underlying acid for the lift and balance with the sweetness and touch of saltiness. This has very good textural richness and drinking fantastically with long, lingering finish with lemon and orange peel aftertaste.

  • 2003 Château de Saint Cosme Gigondas Valbelle 89 Points

    Cloudy dark red with light brown rim. Popped and poured. Beautiful complex nose of kirsch, raspberry, red cherry intermixed with a touch of dark fruits, pepper, licorice, roasted herbs and mineral. Muscular on the palate but well defined. It immediately coated the mouth with high tannin and intensity. This does possess sufficient level of concentration and fruits for the balance but just at the moment the structured is dominated. Long spicy infused finish.

    2nd day: Similar nose that is complex and intense. The structured has mellow down and tannin is well integrated. Smooth entry with very good mid palate depth and sappiness that formed by the delicious concentration of sweet red and dark fruits, a touch of spices and some woody tone. Finished is long and spicy, but also a touch of alcohol heat appeared.

  • 2010 A.J. Adam Hofberg Riesling Auslese 92 Points

    A.P 2 594 581 08 11. Opened for 3hrs. Medium golden. Soft sweet perfume of peaches and apricot, plum, haw flakes, honey pineapple, slate, mineral with a touch of yellow flower and Bortrytis too. Very deep and still rather primary. The serving temp is slightly on the high side and I thought this will be too sweet. However, I was wrong. It was sweet at the entry but with great level of acidity and tons of dry extract for perfect balance and harmony. Quite opulent on the mid palate that offered layers of sweet tropical fruits, light Bortrytis spiciness, saline minerality and despite the concentration, the soft mineral and bright ripe acidity make this wine a elegance one. Then goes on to the clean, dry finished with mineral and good length. This can be drunk now but will require at least a decade to reach the optimal drinking window. 92-93+
