Annual Wine Club journey to Burgundy.
Very exciting 7 course menu. No idea why this restaurant has no star, very creative cuisine with amazing product quality.
Very good Dinner at one star level. Just the meat dish was disappointing.
Great product quality from a boucher in Chablis, simply prepared.

The wine was very mature for its age. It had some pear and minerality. On the palate the salinity was predominant. It was a great fit with with the charlois Tatar with bigournaut oysters at le jardin des Remparts in Beaune.

Great Minerality with some apple and lots of stuffing. Quite ripe for the vintage but its typical for les Genevrieres.
I would drink it now and over the next 5 years.

Superb Corton with lots of Apples, peach and nutty flavors. It took quite some time to open up and should have been decanted. But then it went from strength to strength.
Should easily hold for at least ten more years.

Very good structure and some steely acidity. Perfect length, honey and some peaches.
Perfect balance and everything interwoven.
Will hold for some time at this level.

Nose of cherries, some gaminess and minerality. Takes time to open up and then shows a lot of promise.
Needs time, would not try another before 2015.

Amazing richness with spices, lavender, cherries and citrus aromas. Definitely even for a cote-rotie full-bodied and endless on the palate. Has chocolate and an inner sweetness. Will be very exciting to follow over the next decades.
