Chad Stock of Minimum Wines

Introduction

This was a fantastic opportunity to try Chad Stock's wines right along side his inspiration wine. All of Chad's wines are individually numbered "experiments" and he doesn't intend to ever make the same wine twice. Most of his wines have an inspiration wine that he had tried. Here we drank the inspiration wine right along side his. A really fun time to compare and contrast the wines. Everything was quite good... I'm all for exploration over repetition.

Flight 1 (2 Notes)

  • 2012 Azienda Agricola Terenzuola Vermentino Colli di Luni 86 Points

    Italy, Tuscany / Liguria, Colli di Luni

    Clearish color. Pretty lean aromas with some light lemon and minerality. Fairly quiet, though. Very soft palate entry but it's really really creamy. Not offering too much depth of intensity as it feels subdued. Soft finish too, with quite rich fruit and acid dialing up, but overall not much depth.

  • 2013 Minimus Wines Vermentino Troon Estate 89 Points

    USA, Oregon, Southern Oregon, Applegate Valley

    All concrete fermentation. The vessels were unlined and treated with tartaric acid. Some stewed notes on the nose and also some candied banana and sage. Really different and nice. Smooth in texture with tart acid, rich texture and flavor, and now banana flavored Runts candy. Some funk here, but quite rich. Nice acid on the finish, which is rich and pleasing. Tart, funky, and tons of mineral inflection. Really heavy acid and minerals go on for minutes. Nice.

  • NV Minimus Wines No.10 "24 Months" 88 Points

    USA, Oregon

    This was aged in concrete and french oak, aged on the lees for 24 months. It's 80% Chardonnay and 20% Pinot Gris, with the skins. He disgorged these first 40 cases and plans to disgorge 40 more in 2 years, and 40 more in 10 years. 13.7% alcohol. Very rich and funky aromas of stewed cabbage. Tons of funk and strange fruit. Really funkified, odd, different palate. Lots of heavy strange fruit and minerals. Chunky weirdness in the mouth. Lemons. Rich and creamy in texture. Wow, surprising lemons and tons of rich, interesting banana on the finish. Weird. No dosage but not too cutting either. Nice stuff.

  • 2010 Dauvissat-Camus Chablis 1er Cru La Forest 92 Points

    France, Burgundy, Chablis, Chablis 1er Cru

    Soft and smooth aromas. Rich and elegant. Very pretty and floral, with some pollen notes. Hugely pretty. Soft and smooth palate, rich harmony dials up and begins offering beautiful balance and texture as its held in the mouth... impressive how it only gets better as it sits on the palate. Wonderful and gorgeous stuff! Absolutely beautiful and wonderful impression on the finish. This wine is just so pretty.

  • 2012 Minimus Wines Chardonnay No. 6 Dijon Free Johan Vineyard 90 Points

    USA, Oregon, Willamette Valley

    100% aged in half barrels for 15 months. The ph was 3.1, with 7.9 g/l of total acidity! This was produced from clones that have holistically thought simply not to ripen in Oregon, so you don't see them very often. I love the results, even at this cool site. Only 12.6% alcohol, too. Gorgeous and pretty here, too! Lots of almost stewed, heavy notes. Very thick aromatic textures. Really really creamy and smooth on the palate. Rich, thick, with lovely fruit and acid throughout. Love the palate. Huge acid on the finish, which is incredibly intense. Maybe too much so? It's a singular note of intense puckering acid and minerals on the finish. Nice.

  • 2011 COS Sicilia Pithos Bianco 91 Points

    Italy, Sicily, Sicilia

    Aged in terra cotta for 152 days on the skins, with the vessels buried in the ground. The aromas are so pretty and gorgeous, offering notes of jasmine. So different and pretty. Natasha said this smells like henna. The palate is again quite wild and gorgeous, with an incredible rich melon, tart luscious acidity, and great tartness. Gorgeous pollen note. Really rich and gorgeous fruit, funk, and acid. Tons of acid dials up on the finish. Rich fruit. Lovely!

  • 2013 Minimus Wines A.D. Beckham MMXVII Johan Vineyard 86 Points

    Gruner that spends 77 days on the skins in Amphora. This smells like DEET. Weird. Smells like a mosquito infestation. Heavy shit man. Softer on the palate, but more DEET with nice texture. For me, this is too much mosquito repellent. Quite puckering and lean, and rich. Totally odd tonight, though.

  • 2007 Paolo Bea Arboreus 92 Points

    100% Trebbiano spent 14-15 days on the skin and then aged in steel for 2 years. The aromas are beautiful and gorgeous, of marzipan. Really lovely. Very soft palate entry and so pretty and smooth. Elegant and beautiful. Fantastic rich acid on the finish. Incredibly beautiful and lovely wine.

  • 2012 Minimus Wines Sauvignon Blanc No. 4 43 Days 92 Points

    USA, Oregon, Southern Oregon, Applegate Valley

    Spends 43 days on the skins, aged in oak. Wow, this smells like peaches and apricots covered in bees wax. Really singular and intense. Love it! Rich, crazy and more intense bees wax on the palate. It's really rich and intense, with beautiful gritty tannins dialing. One of the most tannic white/orange wines I've had. Nice note of clove, too.

  • 2010 Clos du Tue-Boeuf Cheverny La Gravotte 88 Points

    France, Loire Valley, Touraine, Cheverny

    100% Pinot Noir. Really crazy, lean green bell pepper aroma. Smells like a Cheverny. Smells bloody. Soft, lean palate entry, with more green notes. Pretty, but quite lean. Cutting and lean finish, which is also soft, tart, and puckering.

  • 2011 Minimus Wines #5 Reduction 89 Points

    Everything's co-fermented here (but I didn't note what "everything" is). Smells like pizza. Some Worcestershire sauce, charred meat... smells like making beef jerky. Really rich meat flavor on the palate too, and it develops nicely. Rich acid and more jerky oh the finish. Also coupled with lovely fruit. Tart and puckering notions. Nice.

  • 2011 Eric Texier Côtes du Rhône Saint-Julien-en-Saint-Alban Vieille Serine Domaine de Pergaud 89 Points

    This wine is totally free of added sulfur. Quite dark in aroma. Thick. Very smooth palate, with tart richness. Pretty mellow. Tart finish as well, but quite pretty. It's dark in flavor, but still offers a lightness to itself which is nice.

  • 2012 Minimus Wines Syrah Stella Maris 90 Points

    This was done in new french oak "to not expose it to other flavors." Very dark in aroma. Smells like mold and sweet road tar. Very different and odd complexion. Tart, but really pretty with bug huffs. Soft palate entry and quite smooth and beautiful. Rich tannins. Puckering finish with lean tannins and hefty acid lingering long. Lovely.
