Pop and pour at slightly below cellar temperature. From Grassl Cru. Transparent deep gold. Subtle nose of bruised apple and a honeyed character. Palate has apple and apricot notes in with citrus in the background, all nicely rounded in character. Nicely fleshed out with some minerality remaining. Finishes with good salinity and slightly nutty notes.

Honeyed greengage, with excellent minerality— tangy, salty and stony. Good whistle-whetting acidity. Good length. Shows class and breed. Fully mature. Likely at peak, but this bottle showed no sign of decline. Top shelf through and through.

Light yellow. Musky salinity and green apple on the nose-this smells like real Chablis! Medium body. Dry and brothy with the apple fruit that the aromas foreshadow plus riper lemon later. Crisp acidity and a finish full of soil. Outstanding, and it has fleshed out and developed much more intensity since last tasted 3 years ago.

Popped and poured. Textbook Chablis and better than a bottle of the regular Dauvissat bottling I opened last year. Notes of saline and orchard fruit and a richness that can be found in outstanding Chablis in good vintages. Fresh on the palate but the tension of youth has dissipated. Drink now.
