Heirloom and Tilia Collaboration Dinner

Introduction

This was the first in a series of collaboration dinners from Wyatt Evans of Heirloom. This dinner featured the eponymous Steven Brown of Tilia and Lucas Almendinger of Tilia. What a way to kick off this series. The influences of both chefs were clearly felt in each dish. Thanks to Steven and Wyatt for putting together a reserve wine pairing for our group of nice as well. Splendid!

Flight 1 - Reserve Wine Pairing (7 Notes)

  • NV Agnès et René Mosse Moussamoussettes - Vin Rose Delicatement Perlant 89 Points

    France, Vin de Table Français

    Cloudy pale salmon color. Drank 1 glass over 20 minutes. Pet-nat, effervescent, a bit foamy, strawberry and tart wild berries, mineral driven with some earthiness. Very tasty indeed and just plain fun.

  • 2015 Clos Cibonne Tibouren Côtes de Provence Cuvée Tradition Rosé Cru Classé 90 Points

    France, Provence, Côtes de Provence

    Very pale salmon color. Drank 1 glass over 30 minutes. A lovely rose with lightness and delicacy yet energetic and flavorful, minerals, cherry, spiced cherry, elegant fresh and bright.

  • 2011 Nigl Grüner Veltliner Privat 91 Points

    Austria, Niederösterreich, Kremstal

    Pale gold color. Drank 1 glass over 30 minutes. Very aromatic and pleasant nose, grapefruit, citrus blend with a tropical bend, almost pungent florals. The palate is consistent, crisp and tangy, crystalline and very tasty. Excellent Gruner. 91+pts.

  • NV Billecart-Salmon Champagne Brut Sous Bois 91 Points

    France, Champagne

    Light medium gold color. Drank 1 glass over 30 minutes. A cuvee i wasn't aware of from B-S. and certainly will follow in the future. A nice blend of green apple, mineral and sauvage with spice box. The palate is a mix of Tarte Tatin, spiced poached pear, yeast and dry minerality in a somewhat more oxidative style.

  • 1996 R. López de Heredia Rioja Blanco Reserva Viña Tondonia 93 Points

    Spain, La Rioja, La Rioja Alta, Rioja

    Light-medium gold color. PNP, drank 1 glass over 40 minutes. Another very fine bottle of Lopez, quite consistent with the last bottle 6 months ago. Very complex and showing lemon, lemon oil, honey, dried apricot, white blossoms, spice and nuts. Very good. not oxidative at all.

  • 2000 Château Brane-Cantenac 93 Points

    France, Bordeaux, Médoc, Margaux

    Very dark red/purple color. This had gotten a double decant, but I do not know the length; drank 1 glass over 40 minutes. Gorgeous, all around. Nice purity of fruit on the nose and palate, cassis, creme de cassis, red berries, earthy, floral. The palate translates the nose perfectly and shows a perfect ripeness to the fruit, silky tannins, and a Margaux elegance. Really in good place - no rush though, this has a long life ahead. 93+pts.

  • 2002 Gosset Champagne Célebris 94 Points

    France, Champagne

    Light gold color. Drank 1 glass over 30 minutes. Lovely toast, lemon, brioche, brisk mineral, floral on the nose. On the palate this is elegant, depth and energy, not weighty, tart lemon, tart pear, lemon chiffon texture, clean minerality. I probably would not have guessed this was Extra Brut off the cuff - really a nice balanced dry wine, nothing abrupt or firm. Delicious, ready to go with upside. 93+ to 94pts.

  • 2013 Paul Pernot et ses Fils Puligny-Montrachet 1er Cru Les Chalumeaux 92 Points

    France, Burgundy, Côte de Beaune, Puligny-Montrachet 1er Cru

    Light gold color. Drank 1 glass over 45 minutes. This bottle was in great shape. Very lively with crisp lemon and bright acid, there's some nice sea brine and subtle earth and minimalist oak influence on the nose somewhat reminiscent of Chablis, but the palate carries more body and texture of P-M. Excellent focus and drive, very good. 92+ to 93pts.
