  • 1994 Heidsieck & Co. Monopole Champagne Blue Top Brut 87 Points

    France, Champagne

    Golden yellow colour still showing some bubbles in the mature nose filled with notes of dried fruit, lighter white flowers and some burnt sugar notes. After some time it opens up with more mature notes of chocolate and cooked vegetables. Palate is dominated by lime peel and somewhat bitter dried fruit on the finish. This has for sure passed its peak, but was still very much alive. Best 2004-2014.

  • 2002 Philippe Gonet Champagne Grand Cru Blanc de Blancs Brut Millésimé 90 Points

    France, Champagne, Champagne Grand Cru

    Still light yellow colour with a lovely nose showing incipient maturity with hazelnuts, flowers and citrus. Palate shows a fine acidic and lemon driven palate that is very elegant and with a well-balanced finish without any oxidative notes. This is drinking very nicely right now, especially from magnum, and shows lots of potential for the future. Best 2017-2027. 90p.

  • 1996 Henriot Champagne Brut Millésimé 93 Points

    France, Champagne

    Yellow colour with a wonderful nose that give an explosion of wonderful notes of flinty crushed stones, sea shells and gun powder at first. It takes quite some time for it to open up showing more nuanced flavors of flowers, lemons and red berries. Palate shows lots of citrus acidity at first, before opening up just a little showing red berries and with a very long bittersweet finish showing lime peel and minerals that lasts forever. Still filled with lots of acidity and enough fruit to back it up for years to come, especially on magnums. Wish I had more of these in my cellar! Best 2021-2036. 93p.

  • NV Vilmart & Cie Champagne Premier Cru Grand Cellier Brut 91 Points

    France, Champagne, Champagne Premier Cru

    (Disgorged in June 2015, base year 2012) Lovely mineral and hazelnut nose in a youthful way. Very well balanced youthful palate showing citrus, minerals and with a long smooth bittersweet lime finish. Much better with some extra time in the cellar before opening! Best with 3-6 years extra cellaring...

Färsk kokt hummer på en mangosalsa och ostron

  • 2002 Dom Pérignon Champagne 93 Points

    France, Champagne

    Light yellow colour with a stream of fine bubbles and a wonderful nose showing lovely layers of hazelnuts, minerals, red berries and hint of dried herbs and butter add to the complexity. Palate shows fresh lime fruit and still with lively acidity and a wonderful long finish showing fruit sweetness that last forever. This was a wonderful showing tonight, but needs more time to open up. Best 2017-2032. 93p.

  • NV Jacques Selosse V.O. Blanc de Blancs Extra Brut 93 Points

    (Disgorged in April 2012, approximately 3-4 years of extra cellaring)
    Yellow colour with very fine and tiny bubbles. Nose shows incipient maturity with dried fruits, minerals and a slight oxidative note. Palate is still very fresh with acidity and a distinct fruitiness and a very long finish showing lots of oak and tannins. This cuvée and disgorgement was drinking very well already, but also showing lots of potential left. (But there was some bottle variation between tonight's two bottles...) Best 2017-2027. 93p.

  • 1999 Gaston Chiquet Champagne Grand Cru Blanc de Blancs d'Aÿ 90 Points

    France, Champagne, Champagne Grand Cru

    (Disgorged in spring of 2008)
    Yellow colour with a stream of fine bubbles and a more round nose showing dried fruit, minerals and after some time also red berries. Palate still with youthful acidity and a creamy mousse with red berries and a long citrus finish. This was a very fine showing from a warmer vintage and showed more acidity than expected. This should probably be fine for at least another decade. Best 2016-2026. 90p.

Flight 3 - Mellandryck (1 Note)

  • NV Champagne Maxims Champagne Flawed

    France, Champagne

    No bubbles left, but still with fresh palate, but with a nose that naturally is a bit muted. This from an uknown origin, but I think from the early 1990's and probably been exposed to light and heating at some point in time that has made loose its bubbles. Still showing figs and plums.

Flight 4 - Huvudrättsdryck (1 Note)

Kalventrecote med potatisgratäng och cognacssås.

  • 2004 Marchesi Mazzei Chianti Classico Castello di Fonterutoli 90 Points

    Italy, Tuscany, Chianti, Chianti Classico DOCG

    Dark red colour and a maturing nose showing cherries, oak and with a hint of leather. Palates shows lots of austere tannins, but also has the fruit to match it. Long finish with lots of fruit and tannins. Was much better together with a creamy potato gratin and needs more time in the cellar to smooth out and can get more maturity. Best 2019-2029. 90p.

  • NV Paul Dethune Champagne Grand Cru Brut Cuvée Prestige Princesse des Thunes 89 Points

    France, Champagne, Champagne Grand Cru

    (Disgorged in September 2015, base year 2007)
    Light yellow colour with a youthful nose showing marzipan, minerals and citrus. After a while there's more maturity showing hazelnuts and some vegetal notes. Palate is much lighter than anticipated with citrus and red berries. Finish shows saltiness and minerals that lasts forever. This was still youthful, but started showing some mature notes. I think it was still feeling very youthful and could kept a couple of more years longer, especially to evolve more on the palate. Best with 3-6 years of extra cellaring. 89p.

    (Disgorged in March 2014, base year 2011, dosage 7 gr/l)
    Yellow colour with a youthful nose showing minerals, citrus and dried herbs. Lighter on the palate showing minerals, citrus and with a lime peel finish. This was perfect as an after dinner-drink, with a well-balanced palate. Best with 1-3 years extra cellaring. 88p.
