The wine took a while to open up and gathered weight with the food. Fully mature. A brooding earthy flavor profile with lots of complexity. A big dark wine.

A very different nose from the other wines in this flight. Much brighter red fruit profile. Somewhat herbaceous. A much lighter, more feminine wine than the others. Nice acidity. Perhaps a bit of volatile acidity.

Wine of the flight. Much younger and less evolved than the others. Brilliant vibrant red fruits. Perfect balance and a gorgeous structure. Impossible to put down. This is what grand cru Burgundy is all about.
Classic mature Bordeaux. This was the lightest, most delicate of the 3 Bordeaux in this flight. Beautiful mix of red and dark fruit, perfectly balanced.
Intense bright blue fruit. This had a hint of volatility but was a captivating wine with lots of lively fruit and acidity in a perfectly structured package.
Awesome wine. This is a massive complex and dark wine that will easily last another several decades. Huge nose of cigar box. Intense black fruit and a solid structure. WOTN.
This wine is still incredibly young. The tannins are noticeable but not harsh at all, just very well structured. The flavor profile is classic pruny Merlot fruit. A gorgeously complex wine.

Still a few tiny bubbles left. Great spine of acidity and caramelized flavors.

Awesome wine. Incredible complexity, caramel flavors and acidity. No bubbles left, just a beautifully complex white wine.
