Introduction

Sherries. Loved them since I was a kid and my grannies drank their pale cream sherries on Christmas Eve. Now, I actually have to know how they are produced and recognise them from other fortified wines. Talk about UNWEAVING THE RAINBOW?!?

Flight 1 - I Want it All (7 Notes)

Sherries and so all white wines....even the deep browns. Staggering how different these are.

  • NV Equipo Navazos Jerez-Xérès-Sherry Fino En Rama 93 Points

    Spain, Andalucía, Jerez-Xérès-Sherry

    Saca (withdrawn from solera) January 2021

    Pale amber and clean. Looks well filtered and fined despite En Rama
    Pronounced nose of Red apple skins, bruised yellow apple, lemon rind, hazelnuts, almonds, dates, honeyed figs
    Dry, medium (-) acidity, low alcohol, medium body, pronounced intensity and long luxurious finsh.
    Best blooming Fino that I have ever had.
    The dryness and alcohol levels make it feel fresh. Its zesty and complex with extended flavors carrying through to a languid endpoint. The flavors are well defined and this is an outstanding quality wine.
    Not suitable for ageing. This is drinking beautifully now. The ageing was done for you in the winery.

  • 2017 Equipo Navazos Manzanilla en Rama

    Spain, Andalucía, Manzanilla de Sanlúcar de Barrameda

    Pale brown and cloudy
    Medium (+) nose of roasted almond, LEMONY SALINITY, bruised yellow apple, acetaldehyde and sourdough bread starter
    Dry, low acidity, low alcohol, medium (-) body, medium flavor intensity and medium finish

    The wine lacks balance and feels watery here. The acid is low but the dryness and alcohol should give a refreshing nature to balance against the concentration of flavors. The length and flavor intensity combine to offer a little to the quality of the wine that has a little complexity but lacks fully defined flavors. Its a good quality wine but in my opinion, it is passed its best and rather tired. The same could be said of myself this Sunday evening. LOL!

    The younger fino wins the race.

  • NV Emilio Lustau Jerez-Xérès-Sherry Amontillado Los Arcos Seco - Dry

    Spain, Andalucía, Jerez-Xérès-Sherry

    Medium amber
    Medium (+) nose of dried apricot, dried yellow apple, lemon, orange peel, toffee , acetaldehyde is minor but there [generally more citrusy and youthful than Oloroso as both Biologically and Oxidatively aged)
    Dry, medium (-) acidity, medium alcohol (18%) - high should be 18.5% and over, medium body, medium (+) intensity and medium (+) finish
    Balanced concentration and freshness. Good intensity and length. Needs more complexity but a very good quality wine here.
    Wine made for consumption soon after release so not suitable for ageing.

  • NV El Maestro Sierra Jerez-Xérès-Sherry Oloroso 15 Años

    Medium amber
    Medium nose of teak oil furniture polish, roasted walnuts, caramel, espresso, bruised pear, bruised lemons
    Dry, low acidity, high alcohol (19%), medium body, medium (+) flavor intensity, medium (+ finish
    The OXIDATIVE NOTES are carried in the burnt sugar and nuts flavor pushing through on the palate to a finish which contributes to the wines quality., The intensity is good and the concentration of the flavors are balanced against the freshness of the wine. It is a good quality wine which would need a longer finish and greater complexity to reach outstanding quality.
    Not suitable for further ageing. The wine is made for consumption soon after release.

  • NV Gonzalez-Byass Jerez-Xérès-Sherry Palo Cortado Apostoles 30 Years Old 91 Points

    Deep amber
    Medium nose of honey, dried fig, dried apricot, ripe plum, roasted walnuts, roasted hazelnuts, toffee, chocolate, espresso, leather
    Off Dry, medium acidity, high alcohol (20%), full body (fuller than Amontillado as more time spent in oxidative ageing and more concentration of ageing process components) , pronounced intensity, long finish
    The acid balances that residual sugar very nicely. Intensity and length are ideal and shows wonderful complexity, Outstanding quality wine which is not going to improve with ageing,

    Apricots (fresh), tinned peaches, tinned seville oranges, sultanas, figsmushrooms,
    Medium dry, medium acid, medium alcohol (17%), medium (+) body, medium intensity, medium finish,
    Balance of sugar and acid perception and freshness. Shows some complexity, Good quality wine which needs better intensity, flavor definition and length to reach outstanding quality.

  • NV El Maestro Sierra Pedro Ximénez Jerez-Xérès-Sherry

    A: Medium brown
    N: Pronounced nose of honey, dried dates, dried figs, molasses, raisins, prunes, bay leaf, dried pineapple
    Sweet, low alcohol, full body, medium (-) acidity (surmised, perceived a bit higher), medium intensity and medium (-) finish
    The alcohol isn't balancing the sugar here and it feels too cloying. The fruit is ill defined and its the sugar that persists on the finish. Some complexity here and so its a good quality wine at best.
    I have had much better examples of PX. This one is disappointing but served too warm.

    Not suitable for ageing. Made for consumption soon after release.

    THis gives PX a bad name OR so I thought till a few days later when I tasted this at a cooler temperature. Far more balanced and less cloying

Closing

Learning and loving these.

Palo Cortado easy to tell from others but Oloroso and Amontillado need a little more attention for me. Oloroso is 100% oxidative so RANCIO flavors are really apparent here, there is generally less of this in Amontillado.
Can I tell a Palo Cortado from a tawny port? Hmm, questions for a different tasting.
