    10 year old Pepe Trebbiano is just starting to unwind. It's nutty, tea-like fragrance. Youthful. Oily. An Umami note comes on. Keeps unfolding. Best at 3 hours open. Salinity and Sweet fruit comes on. Wonderful acidity. Such interesting wines. This will live a long time.

    Opened an hour prior. Starting to enter a drinking zone. It's equally wild and natural, yet, polished with elegance and finesse. There's the slightest tingle of that wiry Pepe carbonic note that dissipates in time and makes these wines so age-worthy. If you like these wines, the 13 is pretty damn strong and should be good for years.

    blind-I thought this was a Bojo ringer-or some natty Loire valley number. Pepper and celery and very bright edgy strawberry fruit. Quite tasty. A good banger of a wine for $30.

    In a real good spot. Nose almost shows stem/herbal notes that are interesting. Polished. Light touch, almost Burgundian. Pretty wine, if that makes sense.
