    With Wellfleet oysters: This had a crisp minerality that accompanied the oysters very well. (But if crisp minerality is the aim, it seems that there might be a range of options, and it is perhaps a shame to serve one of these Pouilly-Fuisse wines in its youth, when its not really showing all that it can.)

    With a tomato gazpacho and a cucumber gazpacho, served with Provincetown lobster and a sprinkling of chili oil (very delicious): An organic rose made from Aglianico, with a mineral foreground and a strong aftertaste of watermelon Starburst.

  • 2021 Marie-Thérèse Chappaz Dôle La Liaudisaz Valais

    With a large scallop, leek pudding, crispy leeks, mushrooms, and black garlic sauce: The server described the wine as "ethically vegan," which provoked a certain amount of consternation and confusion at our table. So we tasted the wine in the midst of attempting to guess what unethical veganism might be, or to discern how any sort of veganism might be relevant, and we were collectively surprised by the fresh and incisive deliciousness of this wine -- clean, mineral, with a lovely dry cherry flavor and just the right amount of acidity.
