A new creation this week. Pineapple salsa over sockeye salmon with roasted bok choy. The salsa started out with a standard recipe, used what we had (anaheim peppers were a good choice in place of bell) and added to it to get a final salsa taste and consistency. Diced pineapple, anahiem pepper, purple onion, blood orange, lime, cilantro, soy sauce, honey, crushed red pepper, salt. The salmon is wild caught by our son-in-law Chilkat River, AK. We ate about a third with rice and will make tacos tonight or tomorrow with the rest. I tried a rhone white, but switched to cerveza, as the beverage.
