We enjoyed a glass of Chardonnay while we gave the Pavie some time to open up. The first taste was of dark cherry with hints of a forest. The last glass was very close to perfect wine. |

We decanted this bottle unlike the last one and after an hour the tannins came out. Very enjoyable, I think this wine is still evolving and improving. |

In the third glass I detected the aroma of a new American made inner tube fresh out of the box. This may sound crazy but it is a very pleasent smell that many may associate with tar or some other petroleum smell. |
