This wine pleased the others at our table but it is not my style. Low acid. Raspberry syrup, with hints of mint and chocolate. I found it too sweet, and almost viscous. Made from (at least) seven different grapes. Ripe berries, plum. Oaky, vanilla, chocolate. Long finish, tannic. Babylonstoren is the Afrikaans for "Tower of Babel", so the name Babel refers to the concept of lots of disparate things coming together in a harmonious whole. (It's a metaphor, baby girl.) Interestingly, my notes show that during the tasting after our cellar tour we were told that the 2021 blend is made of 11 different grape varieties, while all the Babylonstoren tasting notes state that it is from seven varieties: Shiraz, Cabernet Sauvignon, Merlot, Cabernet Franc, Petit Verdot, Pinotage and Malbec.
