Then gradually as it warms, various temperamental blooms of flavor action occur, starting with iodine/bouillon, then cave stone. Before long, a campaign of black raspberry acidity advances into focus. The event follows a pulsing artery of plain blue fruit sugar, though the wine is dry (and barely salted.) Surrounding this I find a busy environment of aromatic leaf (sage, yerba buena, eucalyptus,) seed (poppy, maraschino, caraway,) and mineral (I'm not a geologist.) |

A streak of bitter, sappy calcium teases another drink on the finish. A little more gastric and allium than the previous bottle, which came from a different case, in a different united state. |

Forget zin, this is the red wine I want to pound at summer barbecues from here on out, chilled in a cooler. |

Only after taking delivery of a few trial bottles of this 2021 did I noticed 14% alc. reported on the label. That seems on the high side. And not unexpectedly, after opening a cellar-temperature bottle, the first pour was somewhat thick-textured and praline. Now, after 24 hours, and from the fridge, it's gathered itself into an exciting, inspired object. |

But wait, sensory adjustment stretches that impression out until it gains transparency and structure. It fades and morphs into a functional marker of freshness, less imposing and more supportive. The drink gains wholeness, taking on aromas and flavors of smashed lemons, thistle, and maraschino stone. As it develops, the event yields to a more thirst-quenching grammar: salty, marine, oyster liquor, almond, raspberry, and pear grass. This replicates all stages of evolutionary gastronomic virtue. Classical—raw; chilled tea infusion—ripe nutty extraction; beach dune—masonry arches; fields of pollinators—roots feasting on socially disruptive fungus. |

OK this was a bit of a mistake, I thought it was a Slovenian wine when I grabbed it from the shop, and only discovered it was from Slovakia when I got home. It’s a bit weird, cloudy almost orange in colour. The nose is a bit oxidised, not showing much fruit, the palate is acidic, but with some body, a bit sherry like. I’m not sure what this wine is trying to be, but I don’t really like it. |

Slightly turbid. Dry, with no interruptions of sun and fruit. Ambient natitude, and nothing masked, especially not the old vines, dirt, ecosystem, manual workers, ... it's openly legible, and as soulful as I've ever experienced in a wine. Sorry for the intangible nature of this note, but it can't be any other way. Find some quotations from Zsolt Sütő—the philosopher who produces this—for actual insight. |

Cherry notes along with forest floor are here in a structure than leans in on the tart side, tannins are enough in play to be an non issue while the acidity is brisk and enjoyable. Food brings out some interplay that enhances the drinking experience. Well worth the price, also the first bottle I have tried that required a beer bottle opener to get into it. |
