I decided to let the bottle sit over night. The next day it was somewhat better but food is required. If you have this bottle in your cellar, I’d drink it soon and recommend giving it a 4 hour decant to help dissipate the alcohol. |

The wine has matured to a smooth and silky mouth feel. I remember drinking my first bottle and found it to be sharp and fruity. It has aged well. It's dark burgandy and elegant looking. For me, I got cedar, cocoa and a little smoke, the fruit I remember last time is secondary. Tannins linger giving it some depth and structure. I enjoyed it more with savory food (meat and potatoes). I suppose you could wait another year or so but I think I am going to drink what I have left this year. |
