For the weekend of pandemic Mother’s Day, we prepared Rappahannock raw oysters and grilled oysters with compound butters. Recommended. |

Introduced just this year, it is somewhat revolutionary in the Virginia wine scene. While sparkling wine has been made here for decades, sparkling rosé is not an everyday occurrence in the Commonwealth of Va. I’ve been a fan of Thibaut-Janisson ever since Claude Thibaut’s first release in ‘07 with his 100% Chard sparkler. This particular cuvée is made with about 90% Chard and 10% Pinot Noir. The color is stunning with a salmon-like pink that draws the eye. Unfortunately, that is as good as it gets for this wine. The mousse is vibrant, but not long lived. The bubbles are continuous, but somewhat coarse. Crisp apple on the attack with some yeastiness following. No watermelon or strawberry in the profile as much I want it to be. But rose water and a slight violet appear on the very short and somewhat bitter finish. The wine has no mid-palate. The bitter finish is the wine’s biggest disappointment. The effect of the bitterness is akin to looking at a beautiful woman with a poor fashion sense. The style can be dismissed as a bad fashion day, but then she opens her mouth and the worst accent you can imagine shatters your ears. And you look at her again and find the beauty gone. That is what the finish here does to this wine for me. 12.5% alc. In crystal flutes with a Jefferson stemware design. With goat gouda, aged gouda, “Mountaineer” and “Grayson” cheeses. Recommended with reservations. |

A solid, well made wine that, at $27 is remarkably better than labels bearing “Champagne” for $40. 12.5% alc. With more as an aperitif than anything else, but also with camembert style chevre. With creamed chestnut soup as the first course for Thanksgiving. Recommended. |

12/29/2020 - Sanfoan Likes this wine: NRI absolutely love this wine. To me, this is one of the best domestic sparkling wines for the money. Quite golden in color. On the nose, this is quite yeasty/bready/leesy with a good amount of ripe red apples. On opening, this can be a tad muted but just give it 30 minutes or so and it will open up. Also, this benefits from being served a tad warmer than what you might expect (this will be a tad controversial but I serve this a tad cooler than a red wine). On the palate, the wine has a lot of body, it is quite luscious (in a good way), yeastiness, ripe apple, some honey, maybe a tad of caramel (light caramel), and some zestiness. Finish is very long. |
