Although no expert, I suspect that this might be in it's apogee. In the end the acid, which is there too, may burst through the tannic wall and dominate the limited fruit. Went quite well with homemade burgers, oak-smoked bacon and blue cheese. Drank on a flower day according to Maria Thun's calendar. |
