Honestly, forgot about it in the back of the fridge for about a week and decided to taste the remainder before discarding it. After letting the wine come back up to room temperature, I poured the remaining glass and was pleasantly surprised to find herbal notes and sharp peppery finish with the fruits seeming to deepen and darken to hints of plum and blueberry with a much more pronounced bouquet. Don't know if I had the wrong interperation of this wine and knocked it off too early or if it just need to breath more prior to consumption, but I'm going to sit on my remaining bottles for a bit. |
