Surface Area:
9 hectares including 3.5 hectares of vines more than 20 years old. Parcels include Les Chandeliers, Le Clos, Sué, Berton Moreau and La Montaloise
Grape variety:
Sauvignon Blanc
Type of soil: Mainly shallow clay limestone
Situation:
Flanks of slopes located in the communes of Menetou-Salon, Parassy and Aubinges
Wine production:
Harvested at optimum maturity towards the 2nd fortnight in September
Destemming and press filling by conveyor belt.
Slow, gentle pneumatic pressing to restrict the extraction of vegetable components.
Cold double static racking
Fermentation controlled by thermoregulation in each vat for 8 to 10 weeks
Wine produced in vats and bottled at producer's cellars from April/May the following year
