NOTES ON THE WINE FROM WINEMAKER ROBERT BLUE
Our varietal wines showcase the pure and intense character of each of our organic varietals. We are pleased to be able to oer consumers the opportunity to experience the character that our organic grapes can bring to a great Cabernet Sauvignon. Cabernet Sauvignon is known for creating wines of amazing density and complexity with both concentrated and nuanced avors. In making Bonterra Cabernet Sauvignon, I like to add to these layers of avor by blending in small amounts of other red varietals to add color, texture, and a bit of spice. Varieties and vineyard lots are kept separate until the best lots are blended together to create the nal wine. is Cabernet oers aromas of bright cherry, currant, and raspberry with notes of toasted oak and vanilla. In the glass, you will nd avors of cherry and currant and a lingering and thoughtful nish. Good structure, a moderate weight, polished tannins and a balanced acidity promise an ever more pleasing wine to come. is is a Cabernet Sauvignon which will continue to evolve and remain enjoyable for quite some time to come.
