2009 Waters Cappella

From winery website: "Cappella is the first red wine we’ve added to our portfolio since 2005. Inspired by Jamie’s love for Cheval Blanc, the blend is 60% Cabernet Franc from our estate vineyard in the Rocks (Old Stones), and 40% Merlot from Seven Hills.

Aged 11 months in neutral French oak, the Cabernet Franc dominates the aromatics, but the combination with Merlot creates a rich and abundant nose that is not overwhelming, but still herbaceous and forest floor earthy. There are touches of oregano and white pepper, in addition to graphite, caramel, vanilla and black cherry.

The high tone fruit is juicy, bright and light, coupled with chocolate liqueur, cinnamon, black currant and leather. The intermingling of acids and tannins is balanced perfection. The finish lingers, with a bit of bark on the end. Pair with lighter red meats and fatty fish like salmon. This may be our most elegant wine to date and we are very proud to share it with you."
