The 2010 Estate Cabernet greets the palate with rich and robust flavors of black cherries, plums, cassis, followed by oak notes of cedar, sandalwood and vanilla. The dark flavors produce a velvety and dense texture mouth feel that combine with soft sturdy tannins, followed by a long silky smooth finish.

Ty Caton makes beautiful Cabernet from his vineyard in the foothills of the Sonoma Valley. This is 100% Cabernet that is distinctly big and rich. I recently met with Ty Caton and he is particularly proud of this wine and the 2010 vintage. A dark purple hue. Perfumed aromas of plum, kirsch, cherries, and toasty vanilla oak. Generous dark red fruit especially dark cherries and black raspberry. Nicely layered and textured with blackberry, blueberries, and plum with notes of cassis, roses and vanilla oak. A silky mouth feel with well-integrated tannins and a long flavorful finish. This wine is drinking nicely now but has the kind of backbone that shows it will drink quite nicely for many more years to come. Pair with Chateaubriand, Veal Parmesan, Steak Diane, Prime Rib, Barbequed baby back ribs and hearty chicken dishes. Only 2,010 cases produced.

The 2010 Cabernet Sauvignon is deep and dark, reminiscent of black cherries, with hues of black and purple. On the palate, this wine shows rich flavors of blackberries, cassis, chocolate with a hint of toasty oak. These dark flavors produce a sumptuous and velvety mouth feel that combine with soft sturdy tannins to deliver a long, smooth satisfying finish.
