“56% C.S., 30% Merlot, 7% C.F., & 7% Malbec, ave yield 3.4 tons/acre, hand harvested @ 26.0° ave Brix, and gently crushed into 1.5 & 5 ton open-topped s/s fermenters. Gentle handling of the fruit through hand punch downs & gravity assisted movements were utilized throughout the entire winemaking process. The wine was cleanly racked to 100% small FR oak barrels (50% new) with 5 rackings over 22 mos. 14.5% ABV, 6.7 g/l T.A., & 3.78 pH; 1,275 cases bottled 7/12/17 & released April ’18.”
