2018 Château Haut-Brisson

“90% Merlot & 10% C.F. harvested 10/1 to 10/15/21 from a 22 ha plot of vines (ave 40 yrs of age) planted in clay-limestone, gravel, & clay-loam soils; After a meticulous selection process on the vines and in the winery, the sorted grapes are filled into stainless steel tanks or directly into Bordeaux barrels (about 10% of the harvest). This follows the method of Vinification Intégrale.

“The vatting process lasts 30 days, operating a gentle extraction with pigeages in tank & stirring in barrel. The juices are tasted daily in order to protect the expression of our fruit. These tastings allow us to determine the day for the running off & pressing of the grape marcs. The resulting juice is then placed in barrels (40% new, 40% 1-wine, & 20% 2-wine) for malolactic fermentation & 15 mos of aging. 65,000 bottles produced.”
