2008 Domaine Pavelot (Jean-Marc et Hugues) Savigny-lès-Beaune

"Pavelot owns just over 13 acres of Villages-level Savigny-lès-Beaune, which is spread out amongst some 30 different parcels covering every section of the appellation. Thus the exposition, soil, and inherent nature of each of the parcels is different and quite diverse, allowing the Pavelot!s to produce a wine of great complexity. This may be the most complete overall representation of the village possible. This wine was aged in barrel for just over one year, with only neutral barrels – no new oak – in the mix.


The nose is earthy and pungent, with notes of game and underbrush. The fruit leans toward dark berries, and the texture is rich and full in the mouth. The wines of Savigny often showcase some spice notes as well, and they are in full evidence here. Another 2-3 years in bottle will allow this one to come to its fullest expression."
