November 1, 2022 - Bordeaux tasting - with a few pirates: Consistent. Consistent. Consistent. The slow build on this wine over time really spoke to me. I kept coming back to this bottle. It wasn’t too flashy. It wasn’t too classic. It was a beautiful hybrid of old and new worlds. Purple plum and black raspberry saunter arm-in-arm with deep cherry, currant, cedar, and Christmas spice notes. The equilibrium of flavor and the balanced expansion really take this to the next level. A tick up from my last bottle back on 8/30/2019. One of the few 2016s I’ve had recently that aren’t crawling into a corner, the Cos is a drink now (a decant might have made this even more alluring) or hold for another decade and check it out then. I’ll try to hold my remaining bottles until then…. Good luck with that though…

This Cos may teeter that way at some point, but it was just so solid it might avoid a total shutdown. Always a crap shoot, but I can say it was a bottle I continued to go back to hour after hour and it was money every time.

11/1/22, 10:03 PM - Glad you enjoyed this bottle. I was about 6 months late to my '16 Canon and it was already hibernating. My importer messed up my '16 Cos order so I got them almost a year late and figured if the Canon was shutdown, why waste a Cos? Now, you and Bryan have me thinking I need to open one this weekend.....

11/2/22, 10:11 PM - Oh, I know they'll be worth checking in on in 10 years, but I'll be 74 yo by then, so I will at least try one this coming week with a decant. I bought these things to play, not for me to sit in a corner wasting away until they're perfect.......cheers!

Mark…still cannot believe you are in your 60s. What is your secret? Do you make smoothies out of moon rocks like Gwyneth Paltrow lol!

11/3/22, 9:43 AM - Ha-ha, Vino....only red wine, no moon rocks, but I def would if I had them!

First grandchild due literally any day now and Medicare in 3 more months....I am def on the downside. It helps that I still think I'm 40 yo inside, but I CAN still bike 30-40 mi/day! Maybe that's the secret?

Impressive biking, that is top shape. I just was out running and a 60 yr old crossed paths and we chatted about similar. Proper exercise is then the secret!

11/3/22, 12:27 PM - Thanks, Vino! Yes, exercise is the secret.......but good genes helps the most!
