    April 15, 2023 - Clear but very pale ruby color that’s bordering on light salmon with watery rim. The nose is quite pleasant with watery red fruits, some visceral-meaty qualities, a hint of gamey funkiness with lots of what I would describe as “dense watery-mineral smell” like the waters in the Dead Sea. The palate is medium-bodied, dry, quite intense for such a light colored wine with plenty of powdery tannins with just the right amount of acidity to give it a sense of equilibrium, however, the quality of fruit extraction is a bit too light and lacking for my taste. The flavor profile does indeed resemble a Langhi Nebbiolo or even an entry-level Barbaresco (albeit a more rustic version), with notes of red fruit such as red and sour cherries, raspberries, pomegranates, peppery spices, a little floral overtones, some leather, tar, earthy minerals, with a small amount of discernible oak. I will have to revisit this tomorrow to see how it evolved. The dynamic interaction between the grippy tannic structure with the fresh and savory acidity is what makes this wine intriguing for me. This is my first encounter with this Greek grape variety (Xinomavro) and it was a positive one. Needless to say, this went beautifully with roast lamb gyros and koftas. Day 2: The tannic and acidic components has integrated and mellowed substantially since yesterday. It seems like it has gain some weight while the nose seems to have developed a subtle but delightful sandalwood and freshly dried flower note. Day 3: The fruit completely collapsed, all that remains are essentially the residual tannins and the sourness which made the wine undrinkable. The overall score is the average from my 3 day's tasting experience. 85 - 89
