    August 21, 2023 - Impressive intensity and length. Very rich and lux feeling. Touch of bitterness on the finish which although isn’t great for now bodes we’ll for the future. Try again in a couple of years. 4

    8/23/23, 11:09 AM - I’m afraid I don’t have a full explanation. The champagne guru on our wine forum is convinced that if the wine is balanced then a touch of bitterness on the finish is a good sign for future aging. I think it’s from empirical evidence. I seem to remember reading somewhere that the bitterness is a result of nice, phenolically ripe grapes but I can’t find any references to that .
