  October 21, 2023 - From a bottle disgorged in “spring 2022.” Fresh aromas of pollen, beeswax, Granny Smith apple, black licorice. On the palate, flavors match the aromas, the wine has an elegant mouthfeel with a saline, nutty finish. Bubbles are nice on the tongue, but slightly too prominent on the finish. This was a great champagne to match with a charcuterie plate, it has interesting flavors that invite contemplation…but it lacks a sense of decadence, still I would buy this again.
