    March 15, 2024 - Root Day - Ullage to just the bottom of the capsule. Cork sound and wine had ingressed about 1/2 way. Double decanted (back into bottle) off about a teaspoon of fine sediment. Opaque garnet core extending to a narrow translucent garnet edge. Little in the way of browning. The nose has a vegetal funkiness and a touch of sauerkraut to it initially. With swirling and air the nose changed to dried roses, red fruit and mint. On the palate the flavours are red and blue fruit, savoury herbs, old leather and pipe tobacco. The finish is medium with little in the way of continuation of the palate flavours. Instead the just ripe tannins coat the palate with little in the way of an extended floral or fruit expression. 89 at this point which is essentially a pop and pour. I’ll see where it goes in an hour or so.
    With some time in the glass the Syrah (78% with with rest Mourvedre, Cinsault and Grenache) is really starting to show itself with some smoke, smoked bacon and mint. On the palate there’s some salami with the bacon and the smokiness of the wine is really carrying on into the now medium plus finish. The tannins have receded due to the other flavours coming to the fore. It’s getting more and more complex and interesting as it gets more air.
