  November 6, 2009 - Goldenrod-straw, orange-tinged yellow. Deep and dark with fine, dispersed bubbles. Fino sherry, charcuterie, soy sauce, pu-erh tea, underbrush. Sweaty, white chalk and saline, dried stone fruit, chamomile, oak... thin on the end palate but a steamy finish of spiced, macerated fruits and jamon. Esoteric and uncommon, a departure from everything you would expect.
