  July 10, 2006 - The Petrus Excuse (Eleven Madison Park): Served with Seafood Bisque with Tomato Fumet and Tapioca Pearls. Exotic nose of confiture, dried peaches and apricots. Less unctuous on the palate than the nose would suggest but no less interesting. Lean on the entry and like sherry on the back end, but that's perfectly OK in Champagne. This is still fresh, with even the bubbles busy and vigorous.
