    September 4, 2011 - One of 3 1982 Bordeaux consumed on this evening with cassoulet (the others being a Certain de May and a La Dominique) this bottle married best with the duck confit in and accompanying the food. This was the youngest and freshest of the three wines and I preferred it althought I thought the La Dominique paired a little better with the food. This was the richest, roundest most hedonistic of the three wines, with the tannins having melted into the fruit. The color and development of the wine were not as advanced at the other two. Only the first quarter of the cork was stained red by the wine unlike the other two whose cork was stained from tip to tail.

    The nose was the most reticent of the three wines but grew slowly and inexorably with lots of complexity but promising even more as it continues to develop in the coming years. Cedar, rum laced spicecake, black currants and smoke are the predominant scents I noted. The drink had a lot of presence up front with a velvety mouthfeel and a long lasting finish that continued to change and give pleasure. The main tastes are the black currant concentrate and ripe black cherries and Italian plums.. This is drinking really well right now but I think it has years of life ahead of it still. But with such a hedonistic drink, why wait?
