    November 27, 2011 - Full straw color with fine, moderately aggressive bubbles. Nose: green apple, lemon/lime, and grapefruit with white flowers, lightly honeyed biscuit, and nutmeg/cinnamon spice. Medium body and a fine, rich mousse on the palate: more green apple and lemon/lime fruit with white flowers, yeast/lees, citrus peel, and roasted nuts. Aggressive acidity. Lingering yeast/lees, roasted nuts, and citrus peel on the moderate/long dry finish. Tightly-wound structure with intense flavors and graceful texture. A lot going on under the surface, but drinking a little young right now. Give it 3-5 years in the cellar to open up and develop.
