    July 28, 2012 - Drunk in a restaurant accompanying a fine dinner. My impressions were jotted down on paper the morning after- not a formal tasting note.
    In order to appreciate the nose fully I brought the glass outside the dining room in the open air, and then it really shone. A complex, elegant, fine nose, with fruit, yeast and floral notes all perfectly knit together. The palate was truly remarkable, with a very lively entry, full of fresh white fruit. The initial burst slowly evolves to lower levels of intensity and gains in complexity while remaining elegant and light on its feet all the way through. Long finish, at the end of which one gets a clear perception of the high level of acidity - which finally explains how that intensity of flavour and all that lightness could come together.
    For me this sets a new standard for what "balance" means in wine.
