  November 16, 2012 - Perhaps the bottle was flawed or in a bad phase, but this was very disappointing. I agree with a previous note which said "sour, flat." Poured out the rest of the bottle.

  11/17/12, 12:52 AM - This is an unfined and unfiltered wine, so you have to be very careful when pouring to not disturb the sediment, which can cause a sour and bitter taste. Some people recommend setting the bottle upright a week before serving, then pouring the wine into a decanter in one pour (not pouring and stopping repeatedly, as this will shake up the sediment). Try to stop pouring before any sediment makes it into the decanter. There might be half a glass left in the bottle, but that's the sacrifice you have to make. Enjoy
