  December 13, 2013 - This needs more time in the bottle. I'll not try anymore for at least two more years. 1st night: Red fruit; raspberries and cherries, forest floor, and a hint of ground coffee on the nose. Tart cherry, mocha, and sweet herbs on the palate. Medium length and very tannic, even after two hours of decanting. Vacuum sealed. 2nd night: I poured a glass and resealed the bottle. I was distracted with the kids, and didn't find my glass until four hours later. The wine had opened up and the nose from the previous evening was there, but more pronounced. Additionally, I detected dark fruit and a bit of vanilla. The tannins had calmed down significantly making this glass much more enjoyable. I drank with dark chocolate.
