May 24, 2015 - Opened tonight with pan roasted Chilean Sea Bass. Zippy acidity, yeasty aromas but mercifully light on the toasty character. Somewhat round in the mouth (but we've been drinking non-dosé Blanc de Blancs recently) with lovely mineral notes. Very appealing.
