  December 9, 2015 - Still very young. Slow ox-ed for 8 hours and was still a little tight when we poured the first glass (was drinking well after another hour left open in the bottle). Dark black fruit, organic earth, a soy-sauce-like umami note. The oak and tannins are starting to resolve, but this will benefit from more time.
