    June 12, 2016 - En point. I acquired these in 2012 and kept cool and dry in my cellar. I pulled these out for my birthday celebration at FRANK and it was paired with their lucious 63.5 egg from local birds stuffed with a steak tartare. The mousse is more fine and the structure more vinous. I feel these are closer to the end of their peak than beginning. Drink UP

    6/12/16, 7:23 PM - These are nowhere near their end, they may be in a sleeping state, but LGD from 1990 and prior are drinking just fine. There are lull periods for champagne, much like with fine red wines, where the shut down, like going into a cocoon, to come out a very different sort of wine.

    With champagne it starts with primary fruit and some heated ready features, then it shuts down and when it comes out more floral aromas can usually be detected along with spices, and the cooked fruit from a pie, then that fades a bit and it again shuts down, with the next phase a bit more focused on the sugars and yeasts. with a good LGD this can be notes of caramelization of butterscotch, sometimes, which I really like is a burnt salted caramel. The fruits are there to find but much lighter and air time is needed, which is why it sits a while in the ice bucket. As the wine warms in the glass these are more apparent.

    The final stages show hints of cognac type notes with the mineral and autolyzed yeast notes, and perhaps something descriptive of the acidic part, be whatever kind of citrus or orchard fruit if the notes are more of magic acid.

    Don't give up and it would be a huge waste to drink up a luscious wine right as it was completely shut down. I had some Rogederer cristal from this 2004 vintage that was a bit shut down and it smelled pretty rank, but after some air it brightened up, but its a poor way to drink $180US worth of wine. If you have these laying on their sides and in a cool place with little to no light, let them rest and wait for them to mature, at least as an alternative to being disappointed once again.

    Some 2002 have aged fairly quickly but every vintage is so different and it can be hard to predict but 2004 was solid, it is about finding the right ties to drink. The txt de cuvee is barely 11 years old. It should go for more than decade or so, without any troubles. However opening slowly, and letting it have time in the ice bucket to air things out a bit will be of much help.

    I had plenty of reviews in the 1995 saying it was without bubbles and more like a burgundy. Had i followed suit I would have missed what a great champagne it was several years later. Best of luck.

    6/13/16, 8:43 AM - Alas this was it. I celebrated my birthday and opened all the bottles I had and shared with my friends. Everyone enjoyed it. Also it is possible that there was bottle variation as I did not open and taste each bottle myself. Thanks for your added insight
